I am Mary.
Diabetic Pastry Chef with a crazy sweet tooth.
I discovered my love of pastry making when I was 16, but out of a box.
Over 18 years ago, I started to venture into scratch baking, leading me into a new pastry world. I didn't get to taste a lot of different foods as I grew up, but when I realized the things I was missing, I had to branch off.
Pastry has become my creative playground.
I started to home bake around 2003 when I moved down to Denver. It was in 2010 when I started to dream of taking my passion to a new level. In about 2013 I started to curate a menu but did not execute my plan. Here we are in 2022 and I have been working on growing my knowledge, strengths, and technique... now making this all a reality.
I almost didn't make it this far though. As previously stated, I am diabetic. I was diagnosed in September 2016 as a Type 1 Diabetic. I was shocked by how much my habits, after 31 years, had to change... I tried to cut down on sugar, sweets, and baking. I have learned that moderation is key and I don't need to stop enjoying the things that I enjoy.
What are my goals you wonder? The first goal I had, after starting this business was to finish my culinary degree., On February 21, 2023, I officially graduated from Escoffier School of Culinary Arts with an Associate of Occupational studies in Pastry and Baking.
What does that mean for my future? What kind of ambitions is lingering? I would like to open a storefront and teach some classes. I know my ambitions will grow and this list will get long, but it's a start.
